Same as my late Dad's recipe for carp. Wrap in manure, bake 2 hours at 350
degrees. Throw the carp away and eat the manure. |

Tom Moyer in Idaho used to make sausage out of (IIRC) the whole bear. It was
mixed with pork and smoked.
Tom is a gunsmith who manufactures adjustable replacement triggers for
Rugers and Brownings.

First of all, make sure that ALL of the fat is trimmed from the meat or you
might find it tasting "kinda" strong.
I really like to make steaks on the grill, using the Original Redneck Pepper
as a dry rub.
Actually, Redneck Pepper as a rub on any wild game is a good thing. I'm not
a big fan of hot and spicy food, but this adds just the right amount of
"zip" to the meat.

Whatever you do, remember that bears are subject to trichinosis.
If it's an autumn bear -- one that hasn't been feeding on carrion
nor fish -- pot-roasting with the usual vegetables, plus bay leaf,
peppercorns, and a dry red wine good enough to drink is one way.
I like to add a whole dried cayenne pepper and a whole unpeeled
head (no, not clove -- head) of garlic, both of which I discard when the
dish is done.

Pointedly? The question was not about garlic, but about cooking
bear meat.

Yikes! Why in the world would you *not* eat that head of garlic
afterwards?!

Two reasons. First, it's replacing the traditional onion that
goes into soups and stews to absorb off flavors. Second, all that skin in
there looks unappetizing, if not apt to stick in the teeth.

Bear meat is usually excellent when handeled and prepared properly.
A common practice here in WVa for bear and most any other wild game is
to par boil the meat in water with about 1/4 cup baking soda.
Boil about 30 minutes,remove and thoroughly rinse in cold water.
Then prepare however you like.
This removes the strongness or "gamey" taste as well as blood and fatty
oils and really improves the flavor. |
