Broiled Red Snapper Fillet

Serves 1

1 skinless filet of red snapper -- 3/4 -inch thick 6-ounce
1 tablespoon butter
fine sea salt and fresh pepper
1 lemon

Set toaster oven to Broil. Line the toaster oven tray with foil and butter the tray.
Season the fish on both sides with salt and pepper and brush top with butter. Place
on the toaster oven tray and broil for about 5 minutes until the fish just starts to
flake. Serve with fresh lemon.

Recipe Notes

After five minutes, remove from the toaster oven, insert a metal
skewer into the fish. Leave it 2 seconds. Remove and touch you lip or
hand. If it's cold the fish is raw, if it's so hot it burns you the
fish is overcooked. If it's just warm the fish is just right.
