I wish I had a good source to buy it here in Phoenix. I never have enough

the bones and skin. Sometimes the sales are just too good to resist.

I remove the skin and fat and freeze it for rendering. Then I bone the
breasts and save the bones and any funny looking bits for stock. I wind
up with two good renderings of fat per year. Usually just before
Passover and the new year which coincides with the two times a year I
make chicken soup and matzoh balls.

I never cared for the stuff in jars. It doesn't have the nice onion
flavoring that mine does.

It's been years since I attempted it. I should probably have another go at
it. Many years ago, before one could readily buy boneless chicken breasts
and after several attempts at doing it myself, I used to pre-order them
boned from the butcher for certain dishes that required them.

After all, Blinky the Shark "might" be someone's real name... in some
alternate universe that has access to our Internet. However, Brian
Terwilliger (his real name) does exist and has created a rather
beautiful DVD about Van Nuys airport and the people and planes that
fly out of there. So I figured if there was one Terwilliger who has a
talent for movie producing and directing, there might be another
Terwilliger with a similar talent for cooking.

I've never made it but I was thinking that my local butcher probably
wouldn't mind supplying some odd bits and pieces that I might convert
to stock and schmaltz.

They seem to do enough chickens in a day to be able to spare a bit.

With a good boning knife and a few chicken breasts to practice on, you
should be able to debone one in 15-30 sec. Buy a bulk package of
chicken breasts and practice Smile Then you have the practice, the boned
chicken breasts and the other odds and sods for stock and schmaltz.
